Cameron's Happy Food: Goulash!

Everyone makes their own version of goulash...this is mine and it happens to be Cameron's Happy Food! You will need:


  • 2 lb of ground chuck

  • 1 large bell pepper

  • 3 small cans of tomatoe sauce

  • 2-3 cups uncooked elbow macaroni

Dice the bell pepper and throw into skillet. Or place it calmly into skillet, depending on your mood. Add the ground chuck/beef, chop, season and cook until brown. Drain. While this has been browning, boil your macaroni and drain. Combine in a very large bowl. Add the tomato sauce and toss. Done. The end. Except for the best part...eating. Reuben Chicken = Happy Food

Today I made Reuben Chicken. This is my happy food. The recipe came from a pastor's wife who visited in our home about 20 years ago. It has since become one of my very favorite.



You will need:

6-7 boneless chicken breast

1 large can saurkraut, drained

1 bottle Thousand Island dressing (the smaller size bottle, about 10 oz)

1 pkg sliced swiss cheese, 8 oz



Begin by placing the chicken in a 13x9 glass pan. You may use a metal pan.

Salt and pepper the chicken.

Spread the saurkraut over the chicken

Then pour the 1000 dressing over that.

Bake at 375 for 50- 1 hour.

Remove and place slices of swiss cheese over the top and bake for another 5 minutes or until melts



That's it folks. Simple and delicious.

You must try this. You simply must.
